Ingredients (serves 4)

  • 1 lb ground beef
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 can pinto beans
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tomatoes
  • 1 jalapeño
  • 1 cup sour cream
  • 3 scallions

    Brown the ground beef in a skillet over medium high, breaking it up, until no pink remains, about 7 minutes.

    Drain the fat, then stir in the chili powder, cumin, drained pinto beans, and a splash of water and simmer 3 minutes.
