Beef Quesadillas with Peppers 🧀
Ground beef and melted cheddar wedged between crispy-charred tortillas, loaded with sauteed peppers and onions for a satisfying weeknight crowd-pleaser.

- 1 lb ground beef
- 2 tortillas
- 2 cups shredded cheddar
- 1 bell pepper
- 1 onion
- 2 tablespoons butter

Brown ground beef in a large skillet over medium-high heat, breaking it apart. Drain excess fat.

Add diced bell pepper and onion to beef, cook 4 minutes until softened. Season with salt and pepper.

Butter one side of a tortilla, place butter-side down in a clean skillet over medium heat.

Layer 1 cup shredded cheddar on tortilla, top with beef-pepper mixture, then 1 cup cheddar. Place second tortilla butter-side up on top.
