Ingredients (serves 4)

  • 3 cups cooked basmati rice
  • 2 cups mushrooms
  • 1 onion
  • 1 cup peas
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp garam masala
  • 0.5 tsp turmeric
  • 2 tbsp soy sauce
  • 3 tbsp olive oil
  • Salt and pepper

    Chop mushrooms into 0.5-inch pieces. Make sure cooked rice is completely cooled and grains are separated.

    Heat 2 tbsp oil in a large wok or skillet over high heat. Sauté diced onion until softened, about 3 minutes. Add minced garlic and ginger, cook 1 minute.

    Add chopped mushrooms and cook 4-5 minutes until softened and lightly browned. Push vegetables to the side of the pan.

    Add remaining oil to the center of the pan. Add rice, breaking up any clumps, and stir-fry for 3-4 minutes.

    Add peas, garam masala, turmeric, and soy sauce. Toss everything together and cook 2-3 minutes until heated through and well combined.

    Season with salt and pepper to taste. Serve hot as a complete meal or side dish.
