  • 2 cups rice
  • 1 can black beans
  • 1 cup salsa
  • 1 cup cheddar cheese
  • 1 onion
  • 3 cloves garlic
  • 1/2 cup cilantro
  • 2 limes
  • 2 tbsp cumin
  • 2 tbsp olive oil
  • salt
  • black pepper

    Cook rice in a pot with 4 cups water and salt, covered, until tender, 18 minutes.

    Dice onion and mince garlic. Heat 2 tbsp olive oil in a large skillet over medium-high heat.
