  • 1 lb ground beef
  • 1 head lettuce
  • 3 scallions
  • 3 cloves garlic
  • 1 tbsp ginger
  • 8 oz mushrooms
  • 3 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil

    Separate the lettuce into cup-shaped leaves, rinse, and pat dry. Finely chop the mushrooms, scallions, garlic, and ginger.

    Heat the vegetable oil in a large skillet over high heat and brown the ground beef, breaking it up small, about 5 minutes.

    Add the mushrooms, garlic, and ginger and stir-fry until the mushrooms release their liquid and it cooks off, about 4 minutes.

    Stir in the soy sauce, hoisin, rice vinegar, and sesame oil, and simmer 1 minute until glossy.

    Stir in most of the scallions, then spoon the beef into lettuce cups and top with the rest. Eat with your hands.
