Ingredients (serves 4)

  • 1.5 lbs broccoli
  • 2 onions
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 0.5 tsp turmeric
  • 1 tsp chili powder
  • 3 tbsp olive oil
  • Salt and pepper

    Chop broccoli into bite-sized florets. Toast cumin and coriander seeds in a dry pan 1 minute, then grind coarsely.

    Heat 2 tbsp oil in a large skillet over medium-high heat. Add broccoli florets and cook 5-6 minutes, stirring occasionally, until beginning to char. Transfer to a plate.

    Add remaining oil to pan. Finely slice onions and cook over medium-high heat for 7-8 minutes until deeply golden and crispy. Transfer most to a plate, leaving a bit in the pan.

    Add minced garlic and ginger to pan, cook 1 minute. Stir in ground spices, turmeric, and chili powder, cook 1 minute.

    Return broccoli to pan and toss to coat. Cook 2 more minutes over medium heat.

    Top with reserved crispy onions and season with salt and pepper. Serve hot.
