Ingredients (serves 4)

  • 1 lb okra
  • 2 onions
  • 1 cup canned tomatoes
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tsp cumin
  • 1 tsp coriander
  • 0.5 tsp turmeric
  • 3 tbsp olive oil
  • Salt and pepper

    Trim okra ends and pat completely dry with paper towels. Slice into 0.5-inch rings.

    Heat 2 tbsp oil in a large skillet over medium-high heat. Cook okra in batches 5-6 minutes, stirring occasionally, until crispy and slightly blackened. Transfer to a plate.

    Add remaining oil to pan. Sauté diced onion until dark golden, about 7 minutes. Add minced garlic and ginger, cook 1 minute.

    Stir in cumin, coriander, and turmeric. Add canned tomatoes and simmer 5 minutes.

    Add cooked okra back to pan and toss to combine. Cook 3 more minutes until heated through.

    Season with salt and pepper. Serve hot with steamed rice.
