Broccoli Rice Casserole 🥦
The potluck favorite of tender rice and broccoli baked in a from-scratch cheddar sauce until golden and bubbling.
Ingredients (serves 4)
- 1 cup rice
- 1 lb frozen broccoli
- 2 cups shredded cheddar cheese
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 1 onion
- 1/2 tsp garlic powder
- 1/2 cup breadcrumbs

Heat the oven to 375°F. Cook the rice with 2 cups water, covered on low, for 18 minutes.

Thaw the broccoli and chop any large pieces. Dice the onion and cook it in the butter in a saucepan over medium heat until soft, about 5 minutes.

Whisk in the flour for 1 minute, then gradually add the milk, whisking, and simmer until thickened, about 4 minutes.

Off the heat, stir in 1 1/2 cups of cheddar and the garlic powder until melted. Season with salt and black pepper.

Fold together the rice, broccoli, and cheese sauce in a 9x13-inch baking dish. Top with the remaining cheddar and the breadcrumbs.
