Ingredients (serves 4)
- 2 cans black beans
- 8 corn tortillas
- 2 cups enchilada sauce
- 2 cups cheddar cheese
- 0.5 onion
- 1 teaspoon cumin
- 1 cup corn
- 0.25 cup cilantro
- Salt and black pepper

Preheat oven to 350 degrees F.

Drain beans and mix in a bowl with finely chopped onion, cumin, corn, salt, and pepper.

Warm tortillas over a flame or in a dry skillet for 30 seconds each until pliable.

Spread 0.5 cup enchilada sauce in the bottom of a 9x13 baking dish.
