Chicken Lo Mein 🍜
Silky egg noodles tossed with tender chicken, crisp vegetables, and a savory soy-sesame sauce, restaurant-quality at home.
Ingredients (serves 4)
- 12 oz egg noodles
- 1.5 lbs chicken breast
- 2 cups broccoli florets
- 1 bell pepper
- 4 scallions
- 4 cloves garlic
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 teaspoons sesame oil
- 2 tablespoons vegetable oil
- 1/4 cup chicken stock

Cook egg noodles according to package directions. Drain and toss with 1 teaspoon sesame oil to prevent sticking.

Cut chicken breast into bite-sized pieces. Slice bell pepper into thin strips.

Heat 1 tablespoon oil in a large skillet or wok over high heat. Cook chicken for 5-6 minutes until cooked through. Remove to a plate.

Add remaining oil. Stir-fry broccoli and bell pepper for 3 minutes until tender-crisp.

Add minced garlic and scallion whites. Cook for 30 seconds until fragrant.

Return chicken to skillet. Add noodles, soy sauce, oyster sauce, and chicken stock. Toss everything together for 2-3 minutes until heated through. Top with scallion greens and serve.
