Ingredients (serves 4)
- 1.5 lbs chicken breast
- 1.5 cups roasted cashews
- 3 scallions
- 4 cloves garlic
- 1 tablespoon ginger
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 cup chicken stock
- 2 tablespoons vegetable oil

Cut chicken breast into 3/4-inch cubes.

Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Cook chicken in batches for 4-5 minutes per batch until cooked through. Set aside.
