  • 2 tablespoons butter
  • 2 eggs

    Dice potatoes into 1/2-inch cubes. Heat 1 tablespoon butter in a large skillet over medium-high heat.

    Add diced potatoes and cook, stirring occasionally, until softened and starting to brown, about 8 minutes.

    Dice corned beef and onion. Add to potatoes and press the mixture down, cooking without stirring for 4 minutes.
