Ingredients (serves 4)

  • 4 tilapia fillets
  • 3/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/2 cup milk
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 1 lemon
  • 2 cups vegetable oil
  • 1 tsp hot sauce

    Pat the fillets dry and season both sides with salt and pepper.

    Whisk the egg with the milk in a shallow dish, and mix the cornmeal, flour, paprika, cayenne, and 1 tsp salt in another.
