Ingredients (serves 4)
- 4 potatoes
- 3 tbsp vegetable oil
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 8 corn tortillas
- 1.5 cups shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup salsa
- 1/2 cup sour cream

Peel and dice the potatoes into half-inch cubes, then boil in salted water until just tender, about 8 minutes, and drain well.

Heat 2 tablespoons oil in a large skillet over medium-high heat and fry the potatoes until golden and crisp, about 8 minutes, seasoning with cumin, chili powder, garlic powder, and salt.
