Ham Fried Rice 🍚
Day-old rice tossed in a screaming hot pan with ham, eggs, and peas, better than takeout and ready in 20 minutes.
Ingredients (serves 4)
- 4 cups cooked rice
- 1.5 cups diced ham
- 3 eggs
- 1 cup frozen peas
- 3 scallions
- 3 cloves garlic
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp vegetable oil

Beat the eggs and slice the scallions, keeping whites and greens separate. Use cold day-old rice for the best texture.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat, scramble the eggs until just set, and move to a plate.

Add the remaining oil and stir-fry the ham, scallion whites, and garlic for 2 minutes until fragrant.

Add the rice, breaking up clumps, and stir-fry until hot and lightly toasted, about 4 minutes.
