Ramen Noodle Stir Fry 🍜
Instant noodles ditch the seasoning packet for a glossy garlic-soy sauce, crisp cabbage, and soft scrambled egg.
Ingredients (serves 2)
- 2 packs ramen noodles
- 2 eggs
- 3 cups shredded cabbage
- 1 carrot
- 3 scallions
- 3 tbsp soy sauce
- 2 cloves garlic
- 1 tsp sesame oil
- 1 tsp sriracha
- 1 tbsp brown sugar
- 2 tbsp vegetable oil

Stir together the soy sauce, sesame oil, sriracha, brown sugar, and 2 tablespoons water. Shred the cabbage and carrot, slice the scallions, and mince the garlic.

Boil the ramen noodles without the seasoning packets for 2 minutes, drain, and rinse briefly so they do not clump.

Heat 1 tablespoon oil in a large skillet over high heat, scramble the eggs to soft curds, and set aside.

Add the remaining oil and stir-fry the cabbage and carrot until crisp-tender, about 3 minutes, adding the garlic for the last 30 seconds.

Add the noodles, sauce, and eggs and toss over high heat until glossy and hot, about 2 minutes.

Top with scallions and an extra squirt of sriracha if you like it hot.
