  • 1.5 lb lamb stew meat
  • 1.5 cups orzo
  • 1 can crushed tomatoes
  • 1 onion
  • 4 cloves garlic
  • 3 cups beef stock
  • 2 tablespoons olive oil
  • 1 tablespoon oregano
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • 1 lemon

    Heat olive oil in a large pot over medium-high. Brown lamb pieces on all sides, about 8 minutes total. Transfer to a plate.
