  • 2 tablespoons olive oil
  • 1 onion
  • 2 carrots
  • 1 cup mushroom
  • 1 cup cooked lentils
  • 1 cup vegetable stock
  • 2 cloves garlic
  • 1 teaspoon thyme
  • salt and black pepper to taste
  • 1/2 cup almond milk
  • 2 tablespoons olive oil for potatoes
