Nashville Hot Chicken Sandwiches 🥪
Fiery cayenne-glazed fried chicken with cool pickles and mayo on soft bread, sweet heat you chase with every bite.
Ingredients (serves 4)
- 4 chicken breasts
- 1 1/2 cups all-purpose flour
- 2 eggs
- 1 cup milk
- 2 tbsp cayenne
- 2 tbsp brown sugar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 8 slices bread
- 8 pickles
- 1/2 cup mayonnaise
- 4 cups vegetable oil

Pound the chicken breasts to an even 1/2 inch and season with salt and pepper.

Whisk the eggs with the milk, and mix the flour with garlic powder, 1 tsp salt, and 1 tsp black pepper.

Heat the oil to 350°F in a Dutch oven, then dredge each breast in flour, egg, and flour again.

Fry 6 to 7 minutes, turning once, until deep golden and 165°F inside, then drain on a rack.

Carefully whisk 1/2 cup of the hot frying oil with the cayenne, brown sugar, and smoked paprika, and brush it all over the chicken.
