Ingredients (serves 4)

  • 1 lb chicken breast
  • 12 oz penne
  • 24 oz marinara sauce
  • 2 cups chicken stock
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup grated parmesan
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp italian seasoning
  • 1/4 cup panko

    Cut chicken into 1-inch pieces and season with italian seasoning, salt, and pepper.

    Brown chicken in olive oil in a deep pot over medium-high, about 4 minutes, then stir in minced garlic.

    Add penne, marinara, and chicken stock, bring to a boil, cover, and simmer 14 minutes, stirring twice, until pasta is tender.
