Ingredients (serves 4)

  • 8 oz penne
  • 1 jar artichoke
  • 5 oz spinach
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 2.5 cups vegetable stock
  • 4 oz cream cheese
  • 0.75 cup grated parmesan
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt

    Heat the olive oil in a large Dutch oven over medium heat and cook the minced garlic with the red pepper flakes 1 minute until fragrant.

    Add the penne and vegetable stock, bring to a boil, then simmer covered, stirring occasionally, 10 minutes.

    Drain and quarter the artichokes. Stir them in with the spinach, a handful at a time, until wilted, 2 minutes.

    Off the heat, stir in the cream cheese and parmesan until the sauce is creamy and coats the pasta.

    Season with the salt and plenty of black pepper and serve hot.
