Ingredients (serves 4)

  • 1.5 lb chicken breast
  • 1 can coconut milk
  • 3 tablespoons panang curry paste
  • 1/4 cup peanut butter
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 2 kaffir lime leaves
  • 1 red bell pepper
  • 1 cup carrot slices

    Cut chicken into 1-inch cubes. Slice bell pepper into strips.

    Heat 1 tablespoon oil in a large pot over medium heat. Stir in curry paste and cook for 1 minute.
