Ingredients (serves 4)

  • 1 lb chicken breast
  • 1.5 cups jasmine rice
  • 1 can coconut milk
  • 3 tablespoons red curry paste
  • 2 cups chicken stock
  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar
  • 1 red bell pepper
  • 1 cup green beans
  • basil for garnish

    Cut chicken into 1-inch cubes. Slice bell pepper into strips.

    Heat 1 tablespoon oil in a large pot over medium heat. Stir in curry paste and cook for 1 minute.

    Add chicken and cook until no longer pink on the outside, about 4 minutes.

    Stir in jasmine rice, coating with the curry oil, for 1 minute. Pour in coconut milk and chicken stock.

    Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.
