Ingredients (serves 6)

  • 2 lb pork tenderloin
  • 1 onion
  • 4 cloves garlic
  • 4 jalapeños
  • 1 cup salsa
  • 4 cups chicken stock
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tbsp all-purpose flour
  • 1 lime
  • 1/2 bunch cilantro

    Cut the pork into 1-inch cubes, season with salt and pepper, and toss with the flour.

    Heat 2 tbsp oil in a Dutch oven over medium-high heat and brown the pork in batches, about 4 minutes per batch. Set aside.

    Dice the onion and jalapeños and cook in the same pot until soft, 5 minutes, then stir in minced garlic, cumin, and oregano for 1 minute.

    Return the pork with the salsa and chicken stock. Bring to a simmer, cover, and cook on low until the pork is very tender, about 50 minutes.

    Simmer uncovered 10 minutes to thicken, then stir in chopped cilantro and the juice of the lime.
