Al Pastor Pork Tacos 🌮
Marinated pork with pineapple char and chiles, the vibrant street taco that inspired centuries of tradition.
Ingredients (serves 4)
- 1.5 lb Pork Tenderloin sliced thin
- 3 Dried Guajillo Chile
- 2 Dried Ancho Chile
- 1/4 Pineapple
- 1/4 cup Vinegar
- 4 Garlic cloves
- 1 tsp Cumin
- 1/2 tsp Cloves
- Corn Tortilla
- Cilantro and Onion

Toast dried chiles in a dry skillet for 1 minute. Soak in hot water for 10 minutes, then blend with garlic, cumin, cloves, and vinegar.

Thinly slice pork against the grain. Toss with chile marinade and let sit at least 1 hour (or overnight).

Cut pineapple into 1/4 inch thick slabs. Heat 2 tbsp oil in a large skillet over high heat.

Working in batches, sear marinated pork for 2-3 minutes per side until edges are caramelized and browned.

Grill pineapple slices 2 minutes per side until charred. Slice into chunks.

Warm tortillas and fill with pork and pineapple. Top with fresh cilantro and diced white onion.
