Juicy seared chicken smothered in a silky homemade queso with salsa and corn, ready in one pan.
Ingredients (serves 4)
- 1.5 lbs chicken breast
- 1 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 4 oz cream cheese
- 1 cup milk
- 1.5 cups shredded cheddar cheese
- 1 cup salsa
- 1 cup frozen corn
- 2 scallions

Slice the chicken breasts in half horizontally into thin cutlets and season with the chili powder, cumin, and salt.

Heat the oil in a large skillet over medium high and sear the chicken until golden and cooked to 165°F, about 4 minutes per side, then set aside.

Lower the heat and melt the cream cheese with the milk in the same skillet, whisking until smooth.

Stir in the cheddar a handful at a time until melted, then fold in the salsa and frozen corn and warm through, about 3 minutes.
