Ingredients (serves 4)

  • 1.25 lb shrimp
  • 8 cups mixed greens
  • 2 avocados
  • 1 red onion
  • 1 cup cherry tomatoes
  • 0.5 cup cilantro
  • 2 limes
  • 3 tbsp olive oil
  • 2 cloves garlic
  • Salt and black pepper

    Pat shrimp dry and season with salt and pepper. Heat 1 tbsp olive oil in a skillet over high heat.

    Cook shrimp for 2 minutes per side until pink and cooked through. Transfer to a plate.

    Mince garlic. Juice limes and chop cilantro. Whisk together remaining olive oil, lime juice, minced garlic, cilantro, salt, and pepper.

    Slice avocados. Slice red onion thinly. Halve cherry tomatoes.

    Toss mixed greens with half the dressing. Arrange on plates and top with warm shrimp, avocado, red onion, and tomatoes.
