  • 4 Poblano Pepper
  • 1 Zucchini
  • 1 Butternut Squash cubed
  • 1 Bell Pepper
  • 1 cup Oaxaca Cheese
  • 1/2 Onion
  • 2 Garlic cloves
  • 1 Tomato
  • 1 Egg white
  • 1 tbsp Flour

    Char poblanos over flame, steam in bag for 5 minutes.

    Peel and remove seeds carefully.

    Dice zucchini, squash, and bell pepper. Sauté in 2 tbsp oil with minced garlic and onion for 6 minutes until tender.

    Cool vegetable mixture and toss with 1/2 cup cheese and salt.

    Stuff poblanos with vegetable mixture, coat with flour and beaten egg white, then fry in hot oil until golden, 3 minutes per side.
