Ingredients (serves 4)

  • 6 slices bacon
  • 4 cups frozen corn
  • 2 potatoes
  • 1 onion
  • 2 stalks celery
  • 3 cups chicken stock
  • 1 cup half and half
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

    Chop the bacon and cook it in a Dutch oven over medium heat 6 minutes until crisp. Scoop out the bacon, leaving the fat.

    Dice the onion, celery, and potatoes. Cook the onion and celery in the bacon fat 5 minutes until soft.

    Stir in flour and thyme for 1 minute, then whisk in chicken stock.

    Add potatoes and simmer 12 minutes until fork tender.

    Stir in the corn and half and half and simmer gently 5 minutes. For a thicker chowder, mash a few potato chunks against the pot.
