  • 1 lb ground pork
  • 1 1/2 cups rice
  • 1 onion
  • 1 bell pepper
  • 3 stalks celery
  • 4 cloves garlic
  • 2 cups chicken stock
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne
  • 1 tsp dried thyme
  • 2 scallions

    Brown the ground pork in a large deep skillet over medium-high heat, breaking it up, until deeply crusty, about 7 minutes.

    Add the diced onion, bell pepper, and celery, and cook 5 minutes until soft.

    Stir in the garlic, smoked paprika, cayenne, thyme, 1 tsp salt, and black pepper, and toast 1 minute.

    Add the rice and stock, scrape up the browned bits, cover, and simmer on low 18 minutes until the rice is tender.
