Cheesy Beef and Rice Skillet 🍚
Seasoned beef, tomatoes, and rice simmered together and finished with melty cheddar, the one-pan dinner that never misses.
Ingredients (serves 4)
- 1 lb ground beef
- 1 cup rice
- 1 onion
- 1 bell pepper
- 3 cloves garlic
- 1 can canned tomatoes
- 2 cups beef stock
- 1 tbsp chili powder
- 1 tsp paprika
- 1.5 cups shredded cheddar cheese

Dice the onion and bell pepper and mince the garlic.

Brown the ground beef with the onion and pepper in a deep 12-inch skillet over medium-high heat, about 7 minutes, then drain the fat.

Stir in the garlic, chili powder, paprika, and 1 tsp salt, and cook 1 minute.

Add the rice, tomatoes with their juice, and beef stock, and bring to a boil.

Cover, reduce to low, and simmer until the rice is tender and the liquid is absorbed, about 18 minutes. Do not peek early.
