Ingredients (serves 6)

  • 1 lb ground beef
  • 2 cups pasta
  • 1 onion
  • 3 cloves garlic
  • 1 can kidney beans
  • 1 can crushed tomatoes
  • 2 cups beef stock
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups shredded cheddar cheese

    Dice the onion and mince the garlic. Brown the ground beef with the onion in a Dutch oven over medium-high heat, about 7 minutes, then drain the fat.

    Stir in the garlic, chili powder, and cumin and cook 1 minute until fragrant.

    Add the crushed tomatoes, beef stock, drained kidney beans, and 1 tsp salt, and bring to a boil.
