Beef Taco Casserole 🌮
Layers of seasoned beef, crunchy tortillas, salsa, and bubbling cheddar, taco night in one easy pan.
Ingredients (serves 6)
- 1.5 lb ground beef
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 onion
- 1 can black beans
- 1 cup salsa
- 1 can tomato sauce
- 2 tbsp chili powder
- 1 tsp cumin
- 1 cup sour cream

Heat the oven to 375°F. Dice the onion and brown it with the ground beef in a large skillet over medium-high heat, about 7 minutes, then drain the fat.

Stir in the chili powder, cumin, 1 tsp salt, tomato sauce, and the drained black beans, and simmer for 3 minutes.

Spread a third of the beef in a 9x13-inch baking dish, top with 4 tortillas torn to fit, then half the salsa and a third of the cheese. Repeat, then finish with the last of the beef and cheese.

Cover with foil and bake for 20 minutes, then uncover and bake until the cheese is bubbling and golden at the edges, about 5 more minutes.

Rest for 5 minutes, then serve with sour cream and any taco toppings you like.
