Beefy Bean Burritos 🌯
Fat flour tortillas stuffed with seasoned beef, beans, rice, and cheese, rolled up better than any takeout window.
Ingredients (serves 4)
- 1 lb ground beef
- 4 large tortillas
- 1 cup rice
- 1 can pinto beans
- 1.5 cups shredded cheddar cheese
- 1 onion
- 1/2 cup salsa
- 2 tbsp chili powder
- 1 tsp cumin
- 1/2 cup sour cream

Cook the rice according to package directions.

Dice the onion and brown it with the ground beef in a skillet over medium-high heat, about 7 minutes, then drain the fat.

Stir in the chili powder, cumin, 1 tsp salt, the drained pinto beans, and 1/3 cup water, and simmer 3 minutes.

Warm the tortillas in a dry skillet or microwave until pliable.

Layer rice, beef and beans, cheddar, salsa, and sour cream down the center of each tortilla, fold in the ends, and roll tightly.
