Beef Taco Soup 🍲
Everything you love about taco night simmered into one cozy pot, topped with cheese, sour cream, and crunchy chips.
Ingredients (serves 6)
- 1 lb ground beef
- 1 onion
- 3 cloves garlic
- 1 can black beans
- 1 can pinto beans
- 1 can canned corn
- 1 can canned tomatoes
- 4 cups beef stock
- 2 tbsp chili powder
- 2 tsp cumin
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream

Dice the onion and brown it with the ground beef in a large pot over medium-high heat, about 7 minutes, then drain the fat.

Stir in the minced garlic, chili powder, and cumin and cook 1 minute until fragrant.

Add the tomatoes, drained beans, drained corn, beef stock, and 1 tsp salt, and bring to a boil.

Reduce the heat and simmer uncovered so the flavors come together, about 15 minutes.

Taste and season, then ladle into bowls and top with cheddar, sour cream, and crushed tortilla chips if you have them.
