Ingredients (serves 6)

  • 1 lb chicken breast
  • 12 oz spaghetti
  • 8 oz mushrooms
  • 1 cup heavy cream
  • 2 cups chicken stock
  • 1 cup grated parmesan
  • 1 onion
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 0.5 cup frozen peas
  • 0.5 tsp salt
  • 0.5 tsp black pepper

    Heat the oven to 375°F. Boil the spaghetti 2 minutes short of package time, then drain.

    Slice the mushrooms and dice the onion and chicken. Cook them in butter in a large skillet over medium-high heat until the chicken is no longer pink, about 6 minutes.
