Crispy Tofu Cutlets with Greens 🥬
Panko-crusted tofu cutlets golden and crunchy, served with lemony garlicky greens for a satisfying weeknight dinner.
Ingredients (serves 4)
- 2 blocks extra-firm tofu
- 1 cup panko breadcrumbs
- 3 cloves garlic
- 1/2 cup all-purpose flour
- 1/2 cup vegetable oil
- 1 lb spinach
- 2 tbsp olive oil
- 1 lemon

Press tofu and slice into thin cutlets. Set up three shallow dishes: one with flour, one with water, one with panko.

Coat each cutlet in flour, dip in water, then coat thoroughly in panko.

Heat vegetable oil in a large skillet over medium-high heat. Fry cutlets 3-4 minutes per side until golden and crispy.

In another skillet, heat olive oil and sauté minced garlic for 30 seconds.

Add spinach and cook until wilted, about 2 minutes. Squeeze lemon juice over spinach.
