Ham and Peas Pasta 🍖
Salty ham and sweet peas tossed in a light parmesan cream, the classic way to turn leftover ham into gold.
Ingredients (serves 4)
- 8 oz penne
- 2 cups ham
- 1.5 cups frozen peas
- 2 tbsp butter
- 3 cloves garlic
- 1 cup heavy cream
- 0.75 cup grated parmesan
- 0.5 tsp black pepper

Boil the penne in salted water until al dente, about 10 minutes, adding the frozen peas for the last 2 minutes. Reserve 1 cup pasta water and drain.

Meanwhile, dice the ham and brown it in the butter in a 12-inch skillet over medium heat, 4 minutes, adding the minced garlic at the end.

Pour in the heavy cream and simmer 3 minutes until slightly thickened.

Off the heat, stir in the parmesan, then toss in the pasta and peas, loosening with pasta water until glossy.

Finish with the black pepper and serve with extra parmesan.
