Honey Walnut Shrimp 🦐
Crispy shrimp coated with candied walnuts and glazed in a silky honey-mayo sauce-sweet, crunchy, and totally craveable.
Ingredients (serves 4)
- 1.25 lb shrimp
- 1 cup walnut halves
- 1/2 cup mayonnaise
- 3 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 2 cloves garlic
- 1/4 cup cornstarch
- 2 tbsp vegetable oil for cooking
- 1 tbsp honey for walnuts

Toss walnuts with 1 tbsp honey in a dry skillet over medium heat for 3-4 minutes until glazed and fragrant. Transfer to a plate to cool.

Pat shrimp dry and toss with cornstarch and salt.

Heat 2 tbsp vegetable oil in a large skillet over high heat. Cook shrimp until pink and cooked through, about 3-4 minutes per side. Remove and set aside.

In a small bowl, whisk together mayonnaise, honey, rice vinegar, soy sauce, and minced garlic.

Reduce heat to medium. Add the sauce to the skillet and warm through for 1 minute.

Return shrimp to the skillet, add walnuts, and toss gently to coat. Serve immediately over jasmine rice.
