Ingredients (serves 6)

  • 6 slices bacon
  • 1 onion
  • 3 cloves garlic
  • 2 lb potatoes
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken stock
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 scallions

    Chop the bacon and cook it in a large pot over medium heat until crisp, about 8 minutes. Remove to a paper towel, leaving 1 tbsp fat in the pot.

    Dice the onion and cook it in the bacon fat with the butter until soft, about 5 minutes. Add minced garlic and cook 1 minute.

    Sprinkle in the flour and stir constantly for 1 minute to cook out the raw taste.

    Slowly whisk in the chicken stock. Add the potatoes, peeled and cut into 1/2 inch cubes. Simmer until fork tender, 15 to 18 minutes.

    Mash about half the potatoes right in the pot for a thick, chunky texture. Stir in the milk and warm through.

    Off the heat, stir in the cheddar and sour cream until melted. Season with salt and pepper.

    Serve topped with the crispy bacon, sliced scallions, and extra cheddar.
