  • 1 bell pepper
  • 1/2 onion
  • 1/2 cup shredded cheddar cheese
  • 2 eggs
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

    Dice potatoes into 1/4-inch cubes. Heat 1 tablespoon butter in a large skillet over medium-high heat.
