Ingredients (serves 4)

  • 1.5 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 onion
  • 8 oz mushrooms
  • 2 cups beef stock
  • 2 tbsp all-purpose flour
  • 1 tbsp worcestershire
  • 1 tbsp ketchup
  • 2 tbsp butter

    Mix the ground beef with the breadcrumbs, egg, ketchup, half the Worcestershire, 1 tsp salt, and 1/2 tsp black pepper, then shape into 4 oval patties about 3/4 inch thick.

    Sear the patties in a 12-inch skillet over medium-high heat until deeply browned, about 4 minutes per side, then transfer to a plate.

    Slice the onion and mushrooms, melt the butter in the same skillet, and cook them until golden and soft, about 6 minutes.

    Sprinkle in the flour, stir for 1 minute, then whisk in the beef stock and remaining Worcestershire until smooth.

    Return the patties and any juices to the gravy, cover, and simmer over low heat until cooked through to 160°F, about 10 minutes.
