Satay Chicken Skewers 🍗
Grilled chicken with a rich peanut-coconut satay sauce-aromatic, smoky, and perfect for serving warm or at room temperature.
Ingredients (serves 4)
- 1.5 lb chicken breast
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 2 cloves garlic
- 1 tbsp ginger
- 1/2 tsp red pepper flakes
- 2 tbsp vegetable oil

Soak wooden skewers in water for 30 minutes. Cut chicken breast into 1-inch cubes and thread onto skewers.

In a small bowl, whisk together peanut butter, coconut milk, soy sauce, brown sugar, rice vinegar, minced garlic, ginger, and red pepper flakes.

Heat 2 tbsp vegetable oil in a large grill pan or skillet over high heat. Cook skewers until golden on all sides, about 10-12 minutes total, turning occasionally.

Transfer skewers to a plate and brush generously with satay sauce. Let rest for 2 minutes.

Warm remaining satay sauce in a small skillet over low heat for 1-2 minutes.
