Ingredients (serves 4)

  • 3 cups cooked rice
  • 1.5 lbs shrimp
  • 3 eggs
  • 1 cup frozen peas
  • 1 cup corn
  • 4 scallions
  • 3 cloves garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil

    Peel and devein shrimp.

    Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Cook shrimp for 2-3 minutes until pink. Remove to a plate.

    Add 1 tablespoon oil and scramble eggs until just set. Remove to a plate.

    Add remaining oil and minced garlic. Cook for 30 seconds.

    Add rice, breaking up clumps. Stir-fry for 3 minutes. Add peas and corn. Stir-fry for 2 minutes.
