Smashed Patty Tacos 🌮
Paper-thin smashed beef patties with crispy edges, nestled in warm tortillas with onions, pickles, and a thin layer of mustard for tangy brightness.

- 1.25 lb ground beef
- 12 small corn tortillas
- 1 onion
- Dill pickle slices
- Yellow mustard
- Salt and black pepper

Divide ground beef into 8 thin patties, season generously with salt and pepper on both sides.

Heat a large cast-iron skillet or griddle over medium-high heat until very hot, about 2 minutes.

Place a patty on the hot skillet and immediately press hard with the back of a spatula for 15-20 seconds to smash thin, creating crispy edges. Cook 1 minute more, then flip and cook 45 seconds.
