  • 4 large bell peppers
  • 3 cups frozen spinach
  • 0.5 cup feta
  • 0.25 cup cream cheese
  • 3 cloves garlic
  • 0.5 onion
  • 1 cup canned tomatoes
  • 0.5 cup panko
  • 2 tablespoons olive oil
  • Salt and black pepper

    Slice off the top of each pepper and remove seeds. Chop the reserved tops.

    Heat olive oil in a skillet. Sauté chopped onion, garlic, and pepper tops for 3 minutes.

    Thaw spinach and squeeze out excess moisture. Add to skillet with feta and cream cheese. Cook until cheese melts, about 2 minutes.
