Ingredients (serves 2)

  • 4 flour tortillas
  • 3 cups fresh spinach
  • 1 cup mozzarella
  • 1/2 cup cheddar cheese
  • 1 bell pepper
  • 1/2 onion
  • 2 cloves garlic
  • 2 tablespoons butter
  • 1/2 teaspoon cumin
  • Salt and black pepper
  • Sour cream
  • Salsa

    Dice bell pepper and onion. Melt 1 tablespoon butter in a large skillet over medium heat.

    Sauté onion, bell pepper, and minced garlic until softened.

    Add spinach and cumin. Cook until spinach is wilted.

    Divide mozzarella and cheddar between two tortillas. Top each with spinach mixture and cover with another tortilla.
