Ingredients (serves 6)

  • 1 onion
  • 3 cloves garlic
  • 2 carrots
  • 2 celery stalks
  • 1 pound dried split peas
  • 6 cups vegetable stock
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and black pepper to taste

    Heat olive oil in a large pot. Add onion and cook 4 minutes until soft.
