Ingredients (serves 6)

  • 1.5 lb ground turkey
  • 1 onion
  • 3 cloves garlic
  • 12 corn tortillas
  • 2 cans enchilada sauce
  • 1.5 cups cheddar cheese
  • 0.5 cup sour cream
  • 2 tbsp olive oil
  • Salt and black pepper

    Preheat oven to 350 degrees F.

    Heat olive oil in a skillet over medium-high heat. Crumble in turkey, add diced onion and garlic. Cook until done, 8 minutes.

    Mix cooked turkey with sour cream and season with salt and pepper.

    Spread thin layer of enchilada sauce on bottom of a 9x13 baking dish.

    Layer 4 tortillas, half the turkey mixture, half the cheese, and half the sauce. Repeat layers, ending with tortillas and remaining sauce.

    Top with remaining cheese and bake for 25-30 minutes until heated through and cheese is melted.
