Ingredients (serves 6)

  • 1 lb ground turkey
  • 2 tbsp olive oil
  • 1 onion
  • 3 carrots
  • 3 stalks celery
  • 3 cloves garlic
  • 8 cups chicken stock
  • 3 cups egg noodles
  • 1 tsp dried thyme
  • 1/4 cup parsley

    Heat the olive oil in a large pot over medium-high heat. Brown the ground turkey, breaking it up, until no longer pink, about 6 minutes.
